How to Use Up Your Vegan Christmas Leftovers

So, you made it through Christmas and are now have a few days off work in  that funny time in between Christmas and New Year when everybody is wandering round in a food coma trying to keep the kids entertained whilst not fully knowing what day it is.

If you are anything like us, that's when you check the fridge and realise that, along with all the delicious vegan chocolate and nibbles you have a mountain of half cling filmed Christmas dinner sides and delicious produce that you bought for the big day that now have to be used up!

Well if that's the case then fear not Root Tribe, we got you.  Here are a few vegan recipe ideas for using up leftover Christmas food:

  1. Christmas Leftover Quiche: Combine leftover vegetables (such as Brussels sprouts, carrots, and roast potatoes) with tofu and any other leftover proteins (such as nuts or grains) in a pie dish. Top with a mixture of almond milk, vegan cheese, and spices, and bake until golden and set.

  2. Christmas Leftover Soup: Who doesn't love a delicious bowl of soup at when the weather is cold and drizzly outside?  To create your own vegan soup, chop up any leftover vegetables and sauté them in a pot with some garlic and spices. Add in leftover grains, such as quinoa or rice, and any leftover proteins, such as beans or nuts. Pour in enough vegetable broth to cover the ingredients and simmer until heated through. Serve with a garnish of fresh herbs or a sprinkle of vegan cheese.

  3. Christmas Leftover Gratin: Layer leftover vegetables (such as Brussels sprouts, carrots, and roast potatoes) in a baking dish, along with any leftover proteins (such as nuts or grains). Top with a mixture of almond milk, vegan cheese, and spices, and bake until golden and bubbly.

  4. Christmas Leftover Tacos: Use leftover vegetables (such as Brussels sprouts, carrots, and roast potatoes) and proteins (such as nuts or grains) as fillings for tacos. Serve with your choice of tortillas, salsa, and any other toppings you like.

  5. Christmas Leftover Pasta: Chop up any leftover vegetables and sauté them in a pan with some garlic and spices. Add in leftover grains, such as quinoa or rice, and any leftover proteins, such as beans or nuts. Toss with cooked pasta and a vegan pasta sauce, and serve topped with a sprinkle of vegan cheese.
